Lao Ya Fried Dried Beans

Old ducks have a lot of fat. For health and not to be too greasy, we can combine duck meat with fat. The skins are chopped into pieces separately.

Dried beans are dried at home. They are sold in vegetable markets and supermarkets. It is very convenient. Soak the dried beans in clean water for about half an hour until they become soft. Take it out and drain the water. If the beans are too dry, you can put them in a pot and boil them softly, but they don’t need to be too soft. You will need to cook them with the duck meat later.

Cut red pepper into circles, mince ginger and garlic and set aside.

Pour water into the pot, put the duck into the pot with cold water (don't put the fat and duck skin in), and remove the foam on the surface after boiling.

Pour in a little cooking wine to get rid of the fishy, cook for about 2 minutes, remove it, rinse well and set aside.

Pour the blanched duck pieces into the pot and stir-fry on high heat for about two minutes.

When the duck meat is obviously tightened and the skin is slightly browned, pour in the soft soaked dried snap beans and stir fry together until the snaps are dry.

Pour in a little water, cover the pot, simmer until the duck pieces are soft, and just remove the lid to collect the juice.

Add the chili segments to the pot and stir-fry evenly.

Tips:
When roasting ducks, the amount of water should be based on the simmering time. If the ducks are older and need more time to cook, you can put more water, and if the ducks are tender, put less.
