Lao Ya Stewed Tea Tree Mushroom

Remove the head, tail, claws and internal organs of the old duck, wash it, and chop it into large pieces. Pour clean water into the pot, boil over high heat, add the duck pieces and cook for 2 minutes.

Remove after the surface changes color; drain and set aside.

Cut off the roots of dried tea tree mushrooms, rinse with water and soak for 1 hour, pour out the soaked water and drain.

Pour into a casserole, add enough water at a time, add duck and ginger cubes, cover and simmer for 3 hours.

Add a little salt to season and sprinkle with chopped green onion before serving.
