Lime Hawthorn Jam

Wash the hawthorn, cut in half, remove the pedicle and remove the nucleus.

Put the pitted hawthorn in a casserole, squeeze a whole lemon juice into it, and mix well.

Add rock sugar. My rock sugar powder is not enough, plus a big rock sugar. Facts have proved that the rock candy must be broken and must not be lazy, because the big rock candy is not completely melted in the end.

Add maltose and mix well.

Heat on a low fire and stir constantly with a wooden spatula to avoid sticking the pot.

Use a shovel to shovel the hawthorn while stirring, so that the heat is even and it is easier to boil the hawthorn sauce.

Boil until a piece of hawthorn sauce is drawn on the bottom of the pot with a wooden spatula, and the hawthorn sauce will not flow and close together, so turn off the heat.

Pour the hawthorn sauce into a container and let it cool. If you can't eat it all at once, put it in the refrigerator.
Tips:
If you don’t like the sour taste of lemon, you can just add half of it. But it cannot be omitted, because it can effectively prevent hawthorn from oxidation and discoloration.
The addition of maltose increases the flavor, and makes the hawthorn paste thicker and solidifies better.
If you use a blender to stir the prepared hawthorn sauce, it will be more delicate and taste better.
