Longjing Shrimp

Prepare the tea and shrimp.

Peel the shrimp heads and tails to get the shrimps.

The shrimp is cut from the back to remove the shrimp thread.

Wash the shrimps repeatedly with clean water until they are white, drain them, add salt, Shao wine, and egg whites and stir together.

When the shrimp is stirred until it becomes sticky, add cornstarch and mix together and marinate for half an hour.

Longjing tea is brewed with water at around 80°C.

After 1 minute, go to the tea soup, and set aside the tea leaves and leftover tea juice.

Put oil in the pot and heat until 40% hot, put the shrimps in and slide them away with chopsticks.

Slip until it changes color and quickly remove it.

In another pot, pour the remaining tea leaves and tea soup to boil.

Add the shrimp and cook for a while.

Put it out of the pot and serve it on the plate.
Tips:
1. Fresh sea prawns can be quickly frozen in the refrigerator for two hours and then peeled, which is easier to peel.
2. The time for shrimp frying should not be too long, so as not to affect the taste.
