Loofah and Whitebait Porridge

Soak the whitebait in water for 30 minutes.

Peel the loofah and remove its flesh.
3.
Soak the rice for 1 hour in advance.
4.
After opening, add the loofah to blanch for 10 minutes.
5.
Add clean water to the rice, boil on high heat and turn to low heat to make a viscous mixture.
6.
Finely chop the whitebait and add to the pot.
7.
Dice the loofah and add to the pot.
8.
After stirring well, cook for another 5 minutes.
