Lotus Paste Filling
1.
Soak the lotus seeds in water overnight and check if there are any remaining lotus cores in the soaked lotus seeds.
2.
Boil the soaked lotus seeds in water until they become soft (you can squeeze them with your hands)
3.
Put the boiled lotus seeds and the boiled lotus seed water into the blender and stir (too much lotus seed water can be poured out, as long as the lotus seeds are not over, water is added for better mixing)
4.
Pour the mixed lotus seed puree into a non-stick pan, stir-fry on low heat, and pour the oil in three times. The oil must be mixed in the lotus seed puree each time before the next oil can be poured. Sugar (the amount of sugar does not have to be as much as in the recipe, you can taste it while frying, just as sweet as you like)
5.
Stir fry until the lotus seed mud can form a ball
Tips:
The oil must be added after each fusion before adding the next amount of sugar. You can add or subtract according to your own preferences. Be sure to stir fry while stirring to prevent frying.
