Mandarin Fish with Sauce

The mandarin fish is descaled and cleaned. Slash three times on each side. Add shredded ginger and spring onion to the fish maw. Then add cooking wine and salt to marinate for one hour. Remove the shredded ginger and spring onion and dry the fish noodles. Place it in the oil pan. Fry, fry until two golden yellow, then remove and set aside

Tips:
1. The fish that is fried first and then grilled will be more fragrant, because the large fish is not easy to get through at one time, and the stewing will make it deformed, so the method of first frying and then grilling is very suitable for this kind of big fish;
2. In fact, put the soup directly into the baking dish, and then bake it for a few minutes to get a delicious grilled fish.
