Steamed Mandarin Fish
1.
Prepare the ingredients you need.
2.
Wash the scallion and cut into shreds. Wash and remove the seeds and shred the small hot peppers. Soak them in clean water until they are bent naturally.
3.
Put a knife on each side of the mandarin fish.
4.
Spread cooking wine on both sides of the fish body and the inside of the fish belly, and sprinkle evenly with salt.
5.
Then add shredded ginger or ginger slices, and stuff the ginger slices into the belly of the fish.
6.
Pour an appropriate amount of water into the pot in advance and bring it to a boil. Put the mandarin fish into the steamer and cook for about 10 minutes.
7.
After steaming, take it out, drain the excess water, and drizzle the steamed fish oil on the mandarin fish.
8.
Pour edible oil into the pot and cook until it smokes slightly.
9.
Put the drained green onion and pepper shreds, and pour the cooking oil on the green onion and pepper shreds while it is hot.
Tips:
1. You can cut a few diagonally on both sides of the fish body to make the fish steamed faster and more delicious. If you like to keep the fish intact, you don’t need to cut it.
2. Adjust the cooking time according to the size of the fish. The time in the recipe is for reference.
