Marinated Octopus

Frozen octopus segments in bags, soak in cold water to thaw;

Cleanse and drain the water.

Dried sea pepper, Chinese pepper, garlic;

Heat oil on low heat, and fry dried sea pepper, Chinese pepper and garlic until fragrant;

Tips:
When cleaning hairtail, don't deliberately wash off the "scales". In fact, it is not a scale, but a layer of epidermis formed by special fat, called "silver fat", which is a high-quality fat with high nutritional value and no smell and taste. The unsaturated fatty acids, lecithin and 6-thioguanine contained in the fat are extremely beneficial to the human body.
The oil temperature must be controlled when frying the octopus section: low fire and slow frying; due to the uneven size and thickness of the octopus section, the maturity may be fast or slow, and the oil around the section should be quickly removed and placed in the marinade pot . The fried hairtail section should be soaked in the marinade; after soaking for 4 hours, it can be eaten as needed.
Special attention is that the marinade should not be too salty; if it is too light, it can be improved by removing the marinade and pour it on the hairtail section.
