Meat Skewers

Soak the hind leg meat in cold water to remove the blood, divide into pieces according to the texture, remove the fascia, and slice into three-thick meat slices.

Add 2 tablespoons of light soy sauce, 0.5 tablespoons of dark soy sauce, 1 tablespoon of oil, 1 tablespoon of sesame oil, 1 tablespoon of cooking wine, 2 tablespoons of sesame juice, 3 grams of salt. The salt depends on the amount of meat, the oil consumption and the sauce have a salty taste.

Add the chopped green onion and ginger, stir well, and drown first.

Pepper star anise (better with cloves) microwave oven, 100 degrees for 70 seconds, take out and cool to below 30 degrees, use chopsticks, pour into the meat.

The skewers can be grilled or fried.
