Press a piece of cabbage on the top, cover the shredded cabbage, and put in an appropriate amount of salt (not pickle, don’t put too much, just a little bit, just don’t let it grow too fast and sour). Slowly pour in cold water, and then sit a clean small bowl on it. The diameter of the bowl is about the same as the mouth of the glass bottle. Mine is a bit bigger than the mouth of the bottle. It’s okay.

Pour some water in a small bowl to increase the following weight, seal the bottle mouth with plastic wrap, and wrap the small bowl together

Sit the glass bottle on a deep dish, press the small bowl with your hand, and see if the water inside will flow up, make sure it will not come out of the bottle mouth, put it on the window sill, observe every day, the small bowl will sink slowly. The water surface will rise slowly, and a little water will come out of the bottle mouth at the beginning. Clean up the water on the plate in time, otherwise there will be a smell in the house, especially the fermented water, which tastes great. After the fermentation is completed, there will be no more water. When the water level is lower than the cabbage, it is necessary to replenish water in time, or cool boiled water.
