Crush the donkey-hide gelatin, soak it in yellow wine, and soak it to the basic level, which can reduce the cooking time. It is best to soak Ejiao in yellow wine for 2-3 days in advance. I used half a catty of rice wine to soak half a catty of donkey-hide gelatin, soaked for 2 days, and it took 20 minutes to boil it.

Process sesame and walnut kernels. It is best to have ready-made cooked sesame seeds and cooked walnuts. If you don’t have them, you need to process them first, because the cooked ones taste better. Wash the raw sesame seeds and walnuts and dry them, then put them in a wok and fry them over a low heat. I use an electric baking pan, put the sesame seeds in the pot, turn on the switch, and keep turning with a wooden spoon. For about 5 minutes, turn off the heat and continue to fry. When the temperature drops, it is ready to fry. Let it cool. . Walnuts are also processed in the same way.

Cool the sesame seeds and walnuts to prepare chopped jujube and goji berries. Wash the jujube, remove the pit, and chop it for later use. Wash the wolfberry and dry it for later use.

Pour the soaked donkey-hide gelatin into a casserole (some say that you can't use an iron pot, so here is a casserole), keep stirring on a low heat to prevent the bottom from sticking. When the donkey-hide gelatin is basically boiled, you can add rock sugar, and boil it until there is a big bubble and syrup after tumbling.

Pour the sesame, walnuts, and wolfberry quickly into the pot, stir quickly, add the red dates, stir quickly, turn off the heat immediately, and pour into the container. I use the baking tray of the oven, which is covered with tin foil (or cling film), which helps to remove the boiled Ejiao cake from the mold. Personally, I don't think the oil is very effective.

Tips:
1. It is best to soak Ejiao in advance.
2. Ejiao is very sticky, it is best to use a non-stick pan, or it is very hard to clean the pan.
3. Spread tin foil on the container and throw it away directly after use, so there is no need to brush it again.
4. You can properly reduce the volume when you do it for the first time.
