Oatmeal Coconut Cookies

75g butter melted in water, let cool, add 1 tablespoon of honey and mix well

Brew 1/4 teaspoon of baking soda with 7g hot water, pour it into honey and butter water

Pour 65g oats, 45g low-gluten flour, 10g minced coconut and 40g white sugar into a bowl, and mix them with a manual whisk or spoon.

Pour the fused liquid into the oatmeal bowl

Mix well with a rubber spatula

Take about 10g in your hand and round it slightly

Put it into a baking tray lined with baking paper and flatten it. The diameter is about 4cm, and the thickness is about 0.2-0.3cm.

Put it in the middle of the preheated 180 oven for 15 minutes

Bake until the biscuits are brownish-yellow, they are relatively soft when they are just out of the oven, and they will become crisp after being placed on the wire rack.
Tips:
1. Oatmeal I use Quaker quick-cooking oatmeal, as long as it is of this kind, any brand can be used;
2. If you think the batter is a little bit thin, you can add less oatmeal to adjust it, so that it can be easily rolled into a ball and pressed flat;
3. Because soda powder is added to the biscuits, do not make the biscuits too big, they will become bigger after baking~ When placing the biscuits, there must be a space between the biscuits, otherwise they will stick together when they expand;
4. Soda powder is not easy to completely dissolve in water, don't mind too much, just mix roughly and then mix with butter solution.
