Pimple Soup
1.
Prepare the required ingredients, chop the green onion, ginger, and garlic, and add more ginger to keep out the cold
2.
Add salad oil, green onion, ginger and garlic to the pot, sauté the pot, add appropriate amount of water, and add oatmeal
3.
Add concentrated stock, salt and soy sauce
4.
Stir gently in the pot until the concentrated stock is dissolved into milky white soup.
5.
After the soup in the pot is boiled, add the flour little by little. Sprinkle it evenly into the pot. Don’t let the flour have too large lumps. Bring to a boil on low heat.
6.
Turn off the heat (be careful to turn off the heat first and then put the eggs), beat the eggs into the pot and stir until the eggs are cooked and ready to come out of the pot.
Tips:
If the eggs are cooked too early, they will foam easily, so I choose to use the heat of the pimple soup to scald the cooked eggs after turning off the heat. This kind of eggs will be very tender.
