Octopus Fried Chives

Remove the octopus gizzard and clean it.

Wash the leeks.
3.
Peel off the coat and cut into 2-3 pieces.
4.
Cut into inch segments.
5.
Boil in hot water and let it cool for later use.
6.
Heat the pan with cold oil and saute the ginger.
7.
Add octopus and stir fry over high heat.
8.
Quickly add leeks, salt, cooking wine, sugar and stir fry for a few times.
Tips:
The octopus blanching time should be as short as possible, otherwise the meat will become old during the subsequent heating process.
