Old Vinegar Peanuts
1.
Pick peanuts clean, wash and control water.
2.
Add enough oil to the pot and pour peanuts when the oil is 70% hot.
3.
The crackling sound of fine-fire fried peanuts becomes smaller, and the peanuts are slightly yellow, then remove them and control the oil for later use.
4.
Peel the onion and cut into small cubes.
5.
Wash and chop red hot peppers.
6.
Pour five tablespoons of old vinegar into a clean pot.
7.
Add an appropriate amount of refined salt.
8.
Pour in three tablespoons of sugar, bring to a boil on low heat and turn off the heat.
9.
Add 1/2 tablespoon of soy sauce.
10.
Pour the fried peanuts after the sauce cools.
11.
Pour in the sliced onion and red pepper, add sesame oil and mix well.
Tips:
1. Breathing with your mouth when cutting onions can prevent the eyes from crying when the onions are hot.
2. Deep-fried peanuts should be deep-fried. When the crackling noise of peanuts becomes smaller, remove the peanuts slightly yellow, and they will become brittle after cooling.
3. The juice of peanuts with old vinegar will be boiled on a low fire and let cool. The juice will become thick, and the peanuts can be evenly wrapped in peanuts.
