Pick three pounds of fresh olives

Peeling is so convenient, the next step is to absorb sugar and dry it better.

Put in sugar and put two catties here, if you like sweeter, you can add more

Stir a little and let it stand overnight

The next day, see if the sugar hasn’t melted, just stir until it’s completely melted.

Use a pot that can be filtered

Pour the olives and strain the sugar water

After the syrup is drained, pour the olives into the dustpan and spread the olives evenly during drying.

I’ve been drying it for four days. There is no special requirement to dry it for a few days. According to my own preference, it’s better to dry it for a few more days, but the olives will be harder and chewy. I am not soft or hard right now.
