Oxtail Snow Soup

Choose fresh oxtail bones.

Wash with clean water.

Soak for more than four hours, and change the water every half an hour in between.

After blanching, remove and wash. Put the oxtail bones, whole onions, green onions, ginger, cooking wine, Huadiao wine and enough water in the stew pot. After the high heat is brought to a boil, remove the froth and turn to a low heat to simmer for about three hours. Let cool and put in the refrigerator.

Cut the white radish into hob pieces for later use. After the oxtail soup is refrigerated for several hours, the oil slick on the surface solidifies. Use a spoon to scrape off the oil.

Heat the soup, remove the onions, add the white radish cubes, and season with salt. Simmer on low heat for 40-50 minutes, turn off the heat when the radish becomes transparent.

When eating, you can add white pepper, vinegar and other seasonings according to your preference.
Tips:
Cooking wine and Huadiao wine both have the effect of removing peculiar smell, and they have different effects, so use them as appropriate.
