Oxtail Yam Claypot

Rinse the oxtail.

Along the joints, chop into sections.

Brew with clean water for at least 1 hour, remember to change the water twice in the middle.

Pour cold water into the pot and add the oxtail at the same time. After the water boils, cook for 2 minutes.

Wash out the blood after taking it out. Put it in the soup pot.

After boiling, use a spoon to skim off the blood foam.

Add ginger slices, bring to a boil over high heat, turn to low heat and cook for 2 hours.

Peel the iron root yam, cut into pieces and soak in clean water.

Add dates to the oxtail soup.
10.
Add iron root yam cubes and continue to boil for 1 hour.

According to your taste, add salt and pepper to taste.
Tips:
The yam is peeled and soaked in water to avoid blackening and oxidation.
