Pan-fried Saury

Two saury with a lemon.

Use a knife to open the fish maw to remove the internal organs and rinse with water.

Cut into pieces, remove the fish head without meat, then rinse the fish pieces and drain the water.

Marinate with a little salt and soy sauce for five minutes, add a little salt to the hot oil in a pan, add the fish pieces, and fry slowly over low heat.

Fry until golden brown on both sides.

Push the fish to the side, add appropriate amount of ginger and garlic, sauté until fragrant, and then drip appropriate amount of soy sauce to taste.
7.
Serve on a plate, slice the lemon, squeeze out the lemon juice and drip it onto the fish.
