Peanut Noodles

Pick a little bit of the ten coriander planted on the roof of my own house. Ten coriander is a seasoning dish in our hometown. It is an essential side dish for peanut noodles!

Wash the peanuts, ten coriander, and shallots. Put the star anise, ginger and peanuts together for later use. You can leave the star anise if you don't like it.

Ten coriander and shallots chopped into a bowl, add salt and sesame oil, mix well, and set aside. This step is very important. Put the noodles inside before they come out of the pot for a special taste. This is also the specialty of our hometown noodle soup.

Put the peanuts, star anise and ginger together in a food processor and add some water to break them. If you like a finer texture, beat them for a while. I like the peanut grains so I will beat them a little thicker.

Pour the peanut milk into the pot, add some water, boil and add the noodles, and be sure to hold the pot when you boil the peanut paste! Because peanut milk is easy to spill, I often do this

When the noodles are almost cooked, add greens. The perfect match for peanut noodles is not greens, but dried vegetables, especially dried arugula. The taste is absolutely perfect.

Let's eat! If you don't have ten coriander, you can use coriander instead.
