Pickled Fish Head

(The fish body is used to make grilled fish, so the fish head is only so short. For the method of grilling fish, please refer to my recipe "Spicy Grilled Fish")

The fish head is cleaned and opened from the middle

Add salt, cooking wine, pepper, light soy sauce, ginger and marinate for 15 minutes

Diced sauerkraut

Green pepper red pepper cut into small pieces

Place three scallions on the bottom of the plate, and place the fish head on top

Put a little oil in the pot, drop the green and red pepper rings when the oil is hot, stir fry the sauerkraut for a while

Spread the fried sauerkraut evenly on the fish head and steam in a pot on cold water for 8 minutes

When the time is up, turn off the heat and simmer for 2 minutes before serving, take a small bowl and pour out the soup

Add a little starch to the bowl and stir to make starch soup (if the fish is marinated weakly, you can add some salt at this time to supplement the flavor)

In a separate pot, pour the starch soup to a boil and pour it on the fish head, (sprinkle with chopped green onion and minced garlic) and pour hot oil on it.

Tips:
If the fish head is large, the steaming time should be extended appropriately. Pour out the soup from the steamed fish head instead of water to make starch water to maintain the original flavor, and the plate does not need to be full of soup like to eat Spicy friends can add more chili
