Pineapple Pie
1.
Let me first introduce how to make the filling of pineapple pie, and prepare the peeled pineapple. My pineapple is relatively large;
2.
Cut into small dices, a little bit smaller is better to fry;
3.
Put butter in the wok and melt into liquid at low temperature;
4.
Put the pineapple pulp in and stir fry to get the water out;
5.
Add rock sugar after the water is discharged, because the pineapple is more sour, it would be better to put some sugar in it. You can also put white sugar or soft white sugar. My amount is not large, the taste is still sour, you can add more sugar if you like sweet ones;
6.
Use 12g low-gluten flour, 8g wheat starch and 40g water to make starch water. You can replace wheat starch with corn starch; set aside for later use;
7.
The pineapple juice in the pan has been fried a little dry, and the rock sugar has completely melted;
8.
At this time, pour the starch water; stir fry evenly;
9.
Prepared pineapple filling.
10.
Let's introduce the making of pies. Prepare 100g of butter, 270g of low-gluten flour, 22g of powdered sugar, 1 egg, and 30g of milk; put the low-gluten flour, powdered sugar and softened butter together in a small bowl, and knead it evenly with your hands to make the butter and The flour is rubbed into breadcrumbs, and it is fused and loose; (if there is no low-gluten flour, you can use ordinary medium-gluten flour and cornstarch in a ratio of 8:2)
11.
After kneading the flour and butter, put in an egg and 30g of milk;
12.
Gently grab it into a dough without kneading it smoothly, put it in a fresh-keeping bag and put it in the refrigerator for about 30 minutes. Note that refrigeration is not frozen;
13.
Take out the dough and divide it into two pieces, one large and one small. Roll the large dough into a pie shape and put it in the pie pan. Remove the extra space on the side so that the pie crust fits the pie pan. Here is an eight-inch pie plate;
14.
Use a fork to pierce the inside of the pie crust. I use a naan pin. The pattern is more beautiful. You need to pierce it thoroughly, or it will bulge when you bake it;
15.
Put a piece of tin foil on the tin foil and put soybeans or other beans on the tin foil. I don't have a pie stone, so it's good to use beans instead. Press this way to ensure that the pie will not be deformed and can't be bagged;
16.
Put it in the oven and bake at 150°C for 15 minutes. My oven has a higher temperature, 150°C. I think it's fine; some ovens may need to be raised a little bit, so adjust it according to your own oven habits;
17.
Take out the pie pan after baking. Be sure to wear gloves. It is very hot. Remove the tin foil and beans;
18.
Spread the pineapple stuffing made before. I think this amount is just enough for an eight-inch pie plate, my pie plate is a bit deeper;
19.
Roll the remaining pie crust material into a thin slice and cut into thin strips, as wide or narrow as you like;
20.
Make a grid. This is the first time I make a grid. It's not perfect. Let's make up! Some places have been edited;
21.
Brush another layer of whole egg liquid, so that the surface of the baked pie will be shiny;
22.
Bake the oven at 150 degrees, the middle and lower layer, and bake for about 30 minutes; also, the specific temperature should be adjusted according to the habit of your own oven. If you feel that the surface color is too heavy, you can cover it with tin foil. If the color is lighter, you can increase the temperature;
23.
A beautiful pineapple pie is out! Isn't it beautiful? And the pineapple scent all over the house smells particularly good!
24.
When taking the pineapple pie, be careful not to get burnt by the mold, because it is very hot when it comes out of the oven! Moreover, it is best to choose a non-stick pie pan with a live bottom, so that it will be easy to demold and will not damage the shape of the pie. I personally like a darker pie plate, because it can put a lot of fillings, it tastes very enjoyable!
25.
Cut a piece and taste it. The pie crust is crispy and delicious, and the pineapple filling is sweet and sour. I think it is just right, to my taste, but my mother-in-law and my daughter said it was a bit sour. So if you like to eat sweeter, you can add a little more sugar when frying the pineapple filling. If you like the sour taste, you don’t need to add it. Of course, this should also be the same as your pineapple’s sweetness related. It is recommended to buy a large one, cut a few pieces to eat, and then decide how much sugar to put in when frying the stuffing.
