Purple Sweet Potato Bread

About 3 purple sweet potatoes, peeled and cut into slices, steamed thoroughly

The steamed purple sweet potato is mashed with a large spoon

Divide into 8 purple potato balls

Pour the high-gluten flour into the basin, dig a small hole in the middle, put the active dry yeast, salt and sugar diagonally, add 75g purple potato puree

Then knead into a ball, knead until the dough is a bit sticky but not sticky to the dough, put in softened butter, and continue to knead

Then round the dough, put it in a basin, cover with a wet towel, and perform the first fermentation at 28 degrees Celsius.

Ferment until the dough is 2-2.5 times the original size. Dip a little flour with your fingers, poke the dough, and it won’t shrink back.

Then roll up the dough and divide it into about 30g. The dough can be of different sizes to better imitate purple sweet potatoes of different sizes. Divide into 8 doughs, roll them round, and cover with plastic wrap to allow for 15 minutes.

Carry out the second fermentation, and the fermentation can be done for 30 minutes (use the oven to ferment, put a cup of warm water in the oven), and then preheat the oven to 160 degrees, up and down the heat, and bake for 30 minutes.
Tips:
1. Don't add clean water all at once, add slowly, stirring while adding, until the dry flour is ready to knead;
2. The temperature of the oven should be adjusted according to the temperament of the oven at home. If it feels colored, it should be covered with tin foil.
