Daifuku is a Japanese dessert, that is, glutinous rice dumplings with filling, similar to the enlarged version of gnocchi. The twenty-fourth of the twelfth lunar month is a dust-sweeping day, also called a spring day. On this day, there is a custom of eating glutinous rice balls in southern Jiangsu, which reflects people's good expectations. It is said that Dafu was called "big belly pie" because of its round and uniform appearance, and later generations took its auspicious homonym and renamed it "Dafu".

Purple Sweet Potato Strawberry Daifuku

1. Put the glutinous rice flour, wheat starch, purple potato flour, oil, sugar, and milk into a bowl and stir evenly.

2. Put it in a hot water pot and steam for 10 minutes.

3. Wash the strawberries and wipe dry with paper.

4. Take the red bean paste and knead it into a concave shape and wrap the strawberry.

5. After letting the purple sweet potato glutinous rice ball cool, take 30-40g and knead it smoothly.

6. Press the flat buns into the bean paste and strawberry filling, and slowly close the mouth.
