Purslane Egg Noodles

Fry a poached egg and set aside.

Add oil to the pan and heat, add minced garlic and saute until fragrant, add purslane and saute until soft.
3.
Add salt and stir fry evenly, cover and simmer for a while before serving.
4.
Add water to the soup pot and bring to a boil, noodles and cook.
5.
After the noodles are cooked, remove them, add fresh soy sauce and olive oil, and add the fried purslane and eggs.
