Red Bean Meal Buns

Mix all the ingredients, knead it into a dough (using soy milk instead of water), and knead it to the expansion stage, and carry out the first fermentation at room temperature.

It takes about two hours to ferment to a size of 2-2.5, and voila, it’s already full.

Knead out the air in the dough by hand, divide the dough into 12 equal parts, knead them into round shapes, and let them rise for 15 minutes.

Take a round dough, roll it out with a dumpling stick, and pack in an appropriate amount of red beans (soak the red beans in advance and cook for later use).

Shape it into a bun and put it down.

Put the prepared small meal bag into the greased paper baking tray, leaving enough space between each dough for the second fermentation (I put it in the oven and added a pot of hot water)

Brush the delivered meal bag with a layer of whole egg liquid.

Sprinkle some sesame seeds (there are only black sesame seeds at home, white sesame seeds look better), put the dough in the preheated oven, middle layer, and heat up and down 170 degrees, about 20 minutes.

It can be baked until the surface is golden.
