Red Bean Paste
1.
Prepare the ingredients first, then mix the flour, sugar, yeast, and water to form a smooth dough. In the process of kneading, it is recommended to add clean water in batches, not all at once, and adjust the amount of clean water appropriately according to the water absorption of the flour;
2.
After kneading the dough, cover it with plastic wrap and leave it to ferment at room temperature overnight (about 7 hours at a temperature below 10 degrees). If the temperature at home is high or is not able to grasp the time, it is recommended to knead the dough first and wait for the dough to ferment and put it in the refrigerator for storage;
3.
Put the fermented dough on the silicone mat, knead the dough smoothly, then divide it into 8 small doughs and round them separately. Sprinkle a little dry flour to make hand powder during the operation;
4.
Take one of the small doughs, press flat with the palm of your hand or use a rolling pin to roll them into a round cake, and put 1 tablespoon of red bean paste in the middle;
5.
Wrap the filling in the middle of the dough in the same way as a bun, and pinch it tightly with the cuff facing down. According to this method, wrap the remaining dough completely;
6.
After all the dough is wrapped, gently press flat with the palm of your hand, and sprinkle a little cooked white sesame on the surface;
7.
The electric baking pan is turned on, and after heating, pour a few drops of cooking oil into the brush evenly, put in the wrapped pie dough, cover the electric baking pan, and heat it up and down. It is recommended to reserve a little space between each pie, the pie will become more fluffy during the frying process to prevent sticking together;
8.
Wait for one side to fry until golden brown, turn over with a spatula, cover the lid and continue frying on the other side, fry both sides until golden brown, turn off the power, and serve.
