Red Bean Wotou

Adzuki beans are fully soaked in advance;

Add appropriate amount of water to the pot and cook;

After cooking, add brown sugar and stir until melted;

When it cools to the same temperature as the body temperature, separate the red bean and boiled red bean soup;

Add all the flours to the red beans;

Add yeast powder;

Mix well

Add a small amount of water to boil the red beans several times, and mix well while adding. (I added about 150ml)

And form a uniform dough;

Cover with plastic wrap, ferment at room temperature to 1.5 times to 2 times the size, feel full of bubbles when pressed by hand;

Flatten the fermented dough to exhaust air;

Dip your hands in water, take an appropriate amount of dough (of any size), and pat it into a cone shape;

Then use the thumb of one hand to take out the "wowo" (hands are coordinated. I take photos by myself, but I can't fully express it. However, it is said that in the past, girls who could not "pinch" Wowotou could not get married, haha ~)

"Pinch" it and put it on a bamboo basket. After the steamer is steamed, put it on the pot and steam for 25 to 30 minutes on high heat. (Most of the heads are steamed for a while, but small for a while. However, because the soybean noodles are not easy to cook, it can be steamed for a while).
