Red Simmered Turtle

First, prepare a soft-shelled turtle, about 3 catties. If you have the conditions, you can choose a wild one. If you don't have the conditions, you can choose a domestic one like me.

The slaughter process is a bit bloody, so I won’t let it out. After the slaughter is finished, boil it in boiling water for a minute. Add some peppercorns and half a lemon during the slaughtering process, and then cool the water, then remove the dead skin on it.

Then fry it again. If you have a mine at home, you can choose to fry it. If you don’t have it, you can choose to fry it like me.

Then prepare the following ingredients: dried chili (I prefer to eat spicy so I added 2 devil chilies), ginger, onion, pepper and tangerine peel.

Hot pot base with garlic sprouts, chili and lemon bean paste.

A few garlic heads are being prepared.

One peeled ginger.

Cut the onion into pieces 8.

Dried chili peppers are finely chopped.

Add rapeseed oil and lard to the pot, add the green onion, ginger, garlic and stir fry for 20 seconds, then add the turtle, stir fry a few times, and then pour the white wine from the side of the pot.

Then add the bean paste, stir fry to get the red oil, then add the hot pot bottom material, stir-fry until melted, add the minced chili, and then add the beef bone stock (the stock is not limited here, and there is no problem with adding water without the stock).

Bring to a boil, add the tangerine peels, turn to medium heat and simmer for 15 minutes, then pick out the tangerine peels, cook, serve, and finally decorate. It doesn’t matter if you eat it at home, you don’t need to decorate, you don’t need to be so particular. (ˊᵕˋ )ଓ⁾⁾.
