Nourishing Turtle Soup

Prepare the ingredients: ask the store to kill the turtle, wash the red dates, wolfberry, ginger, garlic, and shallots for later use;

Soak the turtle in boiling water for 2-5 minutes, tear off the outermost layer of black film (including head, feet, front and back); cut off the nails on the turtle's feet;

Pour clean water into the pot, add soft-shelled turtle, cooking wine, ginger slices, green onion, peppercorns, boil over medium heat; remove, rinse with running water;

Add sliced ginger, garlic and green onion and stir fry;

Add the soft-shelled turtle and fry until it is broken;

Add enough water and add pepper;

Put the lid on, bring to a boil on high heat, turn to medium heat and simmer slowly;

After 1 hour, add red dates and continue to stew;

After 55 minutes, add Chinese wolfberry and add salt;
