To prepare the materials, this time I chose sheep spine from Duoduo from Xilin Gol League, Inner Mongolia.

Chop the lamb's spine into pieces, clean it and soak in clean water for several hours, soak it in bleeding water.

Add plenty of water to the pot, add the lamb spine, add 2 tablespoons of cooking wine, and boil on high heat.

Skim the blood foam, be sure to skim it clean.

Prepare the material package.

Drain the dried yellow sauce with water and set aside.

Slice ginger and cut green onion into sections.

After removing the blood foam, add green onions, ginger, ingredients, light soy sauce, dark soy sauce, and rock sugar to a boil.

Finally, add an appropriate amount of dried chili and the drained dry yellow sauce and simmer for about 1 hour on medium and low heat, and season with salt before serving.
Tips:
1. Don't cook for too long, it won't bite if it's simmered from the bone.
2. Add dried yellow sauce, light soy sauce, and dark soy sauce to taste salty, so add salt as appropriate.
3. Soup can be used to cook dishes.
