Red Yeast Rice Noodles

Wash the glutinous rice and soak for 8 hours (or soak overnight in advance.)

The soaked glutinous rice is broken by rubbing it with your hands.

Spread a layer of gauze on the steamer, spread the glutinous rice in the steamer, pierce some holes with your hands, the rice will be breathable and easier to steam.

Put hot water on the pot and steam on medium heat for 25 minutes.

Put the glutinous rice in a large bowl, add an appropriate amount of cold white to boil, spread out and let cool.

Red yeast rice bought in the market.

Add the red yeast rice to the cold glutinous rice.

Stir the glutinous rice and red yeast rice evenly.

Prepare the glass bottles for fermented rice in advance, wash and disinfect them, and ensure that the bottles are oil-free and water-free to avoid moldy failure of fermented rice.

Put the red yeast glutinous rice into the bottle, spread it flat, and insert a deep hole into the bottom of the bottle with chopsticks in the middle.

The left glass bottle is 5L, and the right glass bottle is 3L. Cover the mouth with plastic wrap, then tighten the lid and put it in a cool place. Wait a month for the finished product. (Open the bottle every few days and exhaust the air to prevent the bottle from bursting!)
