Roasted Eel with Honey Sauce

Rinse the dried eel and soak it in clean water for more than 1 hour. (Change the water several times to remove the salty taste)

Put the soaked eel in clean water again (add 1 tablespoon of white wine and ginger slices in the water) and continue to soak for half an hour (to remove fishy).

Rinse the processed dried eel and cut into pieces.

Pour an appropriate amount of oil into the pot, add ginger and garlic slices and saute until fragrant.

Add the eel and stir fry for a while, pour in the cooking wine and stir-fry to get the alcohol.

Add water to the eel, add rock sugar to a boil, turn to a low heat, cover and simmer for about 20 minutes.

Cook until the soup becomes less, pour in honey and stir evenly over high heat, until the soup is dry.
