Roasted Eggplant with Garlic

Peel the eggplant and cut into cubes;

Brush the baking tray with a layer of oil, and spread the eggplants on the baking tray;

Chop about a group of garlic, add sesame oil, vegetable oil, salt, sugar and pepper, and mix well;

Pour the minced garlic on the eggplant chunks;

Put it in the oven and bake for 10-12 minutes at 400F. After baking, use a plastic spatula to move the eggplant with the lid to the plate, and sprinkle with fresh chopped parsley.
Tips:
1. Eggplant is easier to cook, so you don’t need to bake it for too long;
