Romantic Cherry Cheese Mousse

The biscuits are broken with a food processor. This biscuit is a fiber biscuit made by myself. You can buy digestive biscuits or Oreos instead.

Butter blends with water.

Mix the melted butter and biscuits thoroughly and mix well.

Pour into a 6-inch movable bottom round mold, flatten and compact it vigorously, and then put it in the refrigerator for half an hour.

Soak 2.5 gelatine tablets (12.5g) in ice water for later use.

Cream cheese is fully softened at room temperature (if it is cold in winter, you can soften it with water).

Add white sugar and beat with a whisk on low speed until smooth.

Add yogurt and stir well.

Add lemon juice and stir well.

Soak the soft gelatine tablets to drain the water and melt it in water.

Mix the gelatin liquid with the cheese paste.

Pour the milk into a pot and heat it over low heat.

Add an appropriate amount of red yeast rice powder and boil (red yeast powder cannot be eaten raw).

Sift the red yeast rice powder to filter out the undissolved particles, and let cool for later use.

Beat the whipped cream until the lines just appear, and the whisk will drip when you lift it up.

Mix half of the whipped cream with the cheese paste first, then pour it back into the remaining whipped cream and continue mixing.

Divide the cream cheese paste into two equal parts, add more red yeast rice powder to one part, which is dark red, and one part, which is slightly pink, is light pink.

Pour the dark red cheese paste into the mold that was placed on the bottom of the biscuit, and freeze it in the freezer compartment of the refrigerator for 25 minutes.

Then pour the light pink cheese paste onto the layer that was frozen before, and keep it in the refrigerator for more than 2 hours.

The cherry blossoms are soaked in advance, it is best to soak in cold water, although it takes a longer time, but the color is bright.

Vent Sprite. (The fastest way is: Pour Sprite into the egg beater and stir quickly with a manual egg beater.)

10g gelatin tablets melt into liquid after soaking softly. Then mix with Sprite.

Pour the mixed Sprite on top of the refrigerated cake, and garnish with cherry blossoms.

Put it in the refrigerator until the mirror is solidified and jelly shaped and then demoulded.
