Salted Egg Braised Double Winter

Cut the water-fat shiitake mushrooms into thin slices, cut the shallots into sections, cut the winter melon, and chop the salted egg whites and yellow separately, prepare the minced ginger and garlic; two, three, four, add the shiitake mushroom slices and burst slightly;

Put the bottom oil in the pot, raise the heat to medium high, add the salted egg yolk, use a spatula or a spoon to let the salted egg yolk burn loose;

Pour in the minced ginger and garlic and sauté;

Add sliced mushrooms and burst slightly;

Add winter melon and salted egg whites;

Stir fry a few times, add 1/3 tsp sugar and 1/3 tsp pepper, and cook the winter melon. If it is too dry, add some stock or water;

After the winter melon is cooked, cook it with sesame oil as the tail oil, sprinkle with green onions, stir fry a few times, and take it out. Enjoy!
Tips:
Salted eggs are relatively salty, so you should reduce the amount of salt or avoid using salt when serving, otherwise the dishes will be too salty.
