Salted Egg Yolk Sesame Sauce Noodles
1.
Pull down the noodles in hot water, prepare the sauce during the cooking process, shred the cucumber, grind the salted egg yolk, squeeze the garlic into the minced garlic, "break" the sesame paste with sesame oil and a little hot water
2.
After the dough is cooked, remove the cold water and drain the water
3.
To serve the noodles, spread salted egg yolks, minced garlic, and top with broken sesame sauce. You can also sprinkle some sesame seeds~
Tips:
1. If you only use sesame sauce and salted egg yolk, it will taste greasy. Adding a bit of cucumber and minced garlic will make it greasy. If you don’t like garlic, you can also use green onion, coriander and the like instead.
2. Because of the salted egg yolk, this noodle has a rusty texture, which is different from ordinary over-water noodles.
3. For the salted egg yolk, I use seawater duck eggs, so the egg yolk is darker in color, and the egg yolk will be oily. Unfortunately, the photo is not available.
