Alfalfa is a wild vegetable in the field. When the grandparents were in short supply, we could only eat coarse grains of wild vegetables to satisfy our hunger. When Labor Day came, we would eat wild vegetables, remembering bitterness and sweetness, and be grateful to the most beautiful working people.

Scrambled Eggs with Alfalfa Vegetables

1. Wash the alfalfa vegetables and blanch them in boiling water for 1 minute to remove the water.

2. Prepare eggs

3. Alfalfa vegetables are squeezed dry and cut into year-end

4. Put in the egg

5. Add salt and stir well

6. Dip a bit of chicken noodles with chopsticks and stir evenly.

7. Cook the oil and pour in the egg liquid

8. Stir fry until the egg is solidified and ready to be eaten out of the pan

Tips:

Alfalfa vegetables must be blanched before scrambled eggs, otherwise alfalfa vegetables will not be easy to fry.
