125 grams of Ejiao, 125 grams of yellow wine, 100 grams of rock sugar, 200 grams of black sesame seeds, 150 grams of walnuts (If you make 250 grams of donkey-hide gelatin, all ingredients can be doubled).

Pour the crushed donkey-hide gelatin into a relatively large heat-resistant pot (it must be a relatively large container, because walnuts, sesame, rock sugar, etc. will be added later)

Pour in rice wine with the same weight as donkey-hide glue, cover with plastic wrap, and soak for 2-3 days (you can choose ordinary rice wine, I use Shaoxing rice wine, after soaking, the rice wine will not be poured out, and steam it together with donkey-hide glue)

This is soaked soft gelatin. Don't pour out the yellow wine. Don't add water. (We are going to make Ejiao paste that can be cut into pieces, so the ratio of donkey-hide gelatin and wine should be right, 1:1. If there is too much wine or water is added, it cannot be cut into pieces. Up)

Heat the soaked donkey-hide gelatin with a large bowl of water in a steamer, and heat the donkey-hide gelatin until it is completely melted

Add the rock candy to the donkey-hide gelatin, simmer the rock sugar on a low heat until it melts completely (it is recommended to knock the rock sugar into small pieces and then pour it into the donkey-hide gelatin, because rock sugar is difficult to melt)

When the rock sugar is completely melted, add black sesame seeds and chopped walnuts, and stir evenly (must be the rock sugar completely melted before adding these accessories. I used raw black sesame seeds and walnuts here. You can also use cooked walnut sesame seeds to make a comparison. Fragrant)

Continue to steam on low heat for 30 minutes, stirring properly several times (add more water to the steamer to make the heating area of the bowl larger, the heating effect will be better, but remember not to diffuse the water into the donkey-hide gelatin bowl)

Choose a square container and apply a layer of sesame oil to make it easier to take off the bowl later (sesame oil and salad oil are both good, but if you use a glass container, you need to apply more oil. You can also choose baking paper and a thicker plastic wrap, which is thinner. (The plastic wrap and tin foil are difficult to tear off)

Pour the boiled donkey-hide gelatin paste into the bowl, and press firmly (there will be sticky donkey-hide gelatin on the wall of the boiled donkey-hide gelatin paste. Friends who save money can pour some boiling water into the bowl, and drink it under stirring without wasting)

After cooling, cover with a lid, and refrigerate for 24 hours (do not apply too stingy oil on the wall of the bowl, otherwise it will be difficult to take off the bowl)
