This Shanghai fried prawns with oil is one of my mother’s specialty dishes. Now it is also one of the most photographed dishes on my table. After sautéing with fresh small river prawns in hot oil, the color is bright red. The shell is crispy and the meat is tender. All are full of elastic teeth. Endless aftertaste~

Shanghai Fried Shrimp

1. After cleaning the river prawns, cut off the hairs and legs

2. Drain the water

3. Boil the oil in the wok to 80% hot, put in the river prawns, quickly burst and pour out the drained oil

4. Leave the remaining oil in the original pot, add ginger powder and sauté, add cooking wine, soy sauce, Mega Fresh, sugar, and broth to a boil

5. Stir fry the river prawns over high heat, drizzle with sesame oil, sprinkle with chopped green onions, and cook.

Tips:

Stir fry fast in the pan, so that the shrimp will be tender and not too old.
