Shrimp Stuffed Tofu Corner

Remove the shell and tail of the shrimp, and remove the shrimp thread;

Cut the shrimp into small pieces, such as half of corn kernels, then chop them slightly, then flatten them with a knife, and press the shrimp paste to the left;

Put the shrimp paste in a bowl, add 2/3 tsp of salt, 1/3 spoon of pepper, 1 tsp of cooking wine and 1/2 tsp of fish sauce, stir in one direction, and then shake the shrimp paste to the chopping board for dozens under;

Take out the boxed medium firm tofu and drain the water;

Then cut the tofu into chunks, about 5~6 cm in length and width, and about 1~1.5 cm in thickness;

Use a sharper spoon to dig a hole in the tofu block, so as not to dig through;

Spread cornstarch evenly in the holes to stick the filling;

Fill the prawn paste into the hole, don't pile it too high, just a little bit higher than the tofu plane;

In a non-stick pan, put in the tofu cubes, and fry the stuffed side down on a slow fire until the stuffing is golden brown;

Reverse and fry the bottom and fry until golden brown;

If the color is not enough for the first time, you can repeatedly fry on both sides, but be careful when moving to avoid de-stuffing;

In another pot, add 5-6 tablespoons of water, 1 teaspoon cornstarch, 1/2 teaspoon chicken essence, 1/2 teaspoon sesame oil, 1/4 teaspoon salt, and 1/8 teaspoon sugar. Bring to a boil Until large bubbles are formed, pour over the fried tofu noodles.
Tips:
1. The stuffing is best to use fresh, not only the meat is delicious, but also easy to get strong, if there is no fresh fish, it is recommended to use shrimp.
2. Fish meat and shrimp should be chopped and pureed. Try not to use a food processor. When stirring fish, pork, shrimp and other fillings, stir in one direction to strengthen the muscles;
3. Be careful when digging tofu holes and try not to dig through the bottom;
4. As far as inlaying meat is concerned, it is best to coat a layer of dried cornstarch or cornstarch in the hole, which is easier to stick to the filling, and the filling is not easy to fall off during the frying process;
5. Don't use high heat when frying tofu. Slowly fry the shrimp meat thoroughly and evenly;
6. Pour the transparent gorgon sauce to make the tofu more flavorful.
