Shrimp Yuzi Tofu

1. Ingredients: 2 yuzi tofu, 3 eggs, 5 fresh shrimps.

2. Remove the shrimp heads and peel off the shells (leave the shrimp tails), cut off from the back, pass the shrimp tails through the middle, and slightly arrange them into shrimp balls.

3. Put the processed prawn balls into a bowl, add a little white pepper, 1 g salt, and a little starch to mix well and set aside.

4. Tofu is cut from the middle and cut into 0.5 cm thick slices.

5. The sliced jade tofu is laid flat on the plate.

6. Beat the eggs into a bowl and add 2 grams of salt to beat them thoroughly.

7. Put the beaten egg mixture into a dish lined with yuzi tofu, put it in a steamer, and steam it on low heat for 10 minutes.
