Simple Pan-fried Salmon

Marinate the salmon with lemon (using a Thai green orange) and sea salt for 30 minutes (put it in the refrigerator to marinate)

Cut potatoes and purple potatoes into 1cm squares, put them in water and cook until half-cooked, add asparagus (asparagus should first cut off the old roots), blanch until the asparagus is colored, and remove them all together

The asparagus is too cold in ice water

Put butter in the pan, melted, add onion and thyme, stir fry until fragrant, add potatoes and purple sweet potatoes, fry until the surface is slightly browned, season with salt and pepper, and place on a plate

Pour heatable olive oil (other vegetable oils are okay) into the pot, heat it to 60 to 70% hot, add the marinated salmon, fry on medium heat for 3 to 4 minutes, turn it over, and fry until golden.

Sprinkle a little sea salt and freshly ground pepper after cooking
