Skinny Eel
1.
Remove the head, internal organs, bones and clean the eel
2.
Cut the eel in half, and then cut the eel into segments about 7 to 8 cm in length
3.
Add salt, soy sauce, and a little pepper to marinate for about 10 minutes
4.
The surface of the marinated eel is coated with starch
5.
Add oil to the hot pan. Use more oil. When the oil is 70% hot, put the eels straight in and fry them for 3 minutes and remove them.
6.
Heat the oil pan again until it smokes on the surface, pour the eel into the fragrant fry and remove it. Boil the oil to 90% hot again, pour in the eel section and fry it until the surface is golden. When the eel section is hard, start the pot
7.
Mix soy sauce, vinegar, sugar, a little water and starch to make a sauce
8.
Add a little base oil in a hot pan, cut the green onion and ginger into shreds, add the sauce after the oil is hot, pour the sauce and stir well
9.
Add the fried eel
10.
Stir-fry thoroughly, so that each eel segment is covered with the sauce and then the pan is ready
