Smashed Ear Roots

Fold the roots of the ears, remove the black beards, and remove the old parts, and pluck them into small sections.

Wash all ingredients. Shred the ginger, smash the garlic and cut into small pieces, cut the onion and coriander into sections, and cut the dried chili into sections.

Wash the ear roots and put on a plate, put the coriander and green onion, pour in some light soy sauce and vinegar (depending on personal taste).

Heat oil in a pan, add ginger shreds and saute, then add the dried chili section, turn off the heat when the color changes, add garlic and green onion, and stir fry.

Finally, pour in the root of the ears, stir it, and serve.
