Snow Lotus Seed, Snow Fungus, Rock Sugar, Syrup

Prepare all the ingredients. The snow lotus seeds need to be soaked for 20 hours, so they should generally be soaked in advance.

The snow lotus seeds are steamed in a pot with (boiled water) for 10 minutes. I use a pressure cooker. Ordinary pot is about to steam for 15-20 minutes, super cold water, set aside

Soak the snow fungus 20 minutes in advance, and boil it in a normal pot for 10 minutes, over cold water, and set aside. Soak red dates/longan for 20 minutes, set aside.

Boil quail eggs and remove their shells, and set aside.

Put the red dates/longan/snow lotus seeds/white fungus/quail eggs in the pot, put three bowls of water, the usual eating bowl, about 800 grams, boil for 10 minutes, add rock sugar until the sugar melts.
Tips:
1. The snow fungus/snow lotus seed water is too cold to make the sugar water lighter. Because the snow lotus seeds / snow fungus have a lot of gelatin, if they are cooked directly, they will be sticky in a pot. Although too cold water will remove some nutrients, it still prefers a lighter taste. If you don’t mind, you can omit the snow fungus/snow lotus seed over-cold water step.
2. After cooling, put it in the refrigerator for a better taste. Add some wolfberry berry to make the color more attractive.
