Sour Radish Lao Duck Soup

Chop the cleaned duck into small pieces.

Peel the white radish, wash and cut into small pieces.

Put a little oil in the pot, add green onion, ginger, star anise and pepper to fragrant.

Add the duck meat to a low heat and stir out the fat on the duck skin.

Put the simmered duck meat and radish in a casserole, and add an appropriate amount of water. Add sour radish and sour radish soup. (The fried duck fat is not used in the wok)

Bring to a boil on high heat, skim the froth and oil, and skim it several times. Reduce the heat and simmer for one hour.

Add salt and pepper to taste. You can also add some coriander to taste, because there is none, so I used mint leaves as a garnish.
