Sour Soup with Beef

These are all ingredients, prepare in advance

Prepare dishes: mince ginger garlic, Hangzhou pepper, and millet pepper, cut off the roots of the enoki mushrooms, and tear them apart. Defrost the beef for later use.

Blanching: boil the beef in a pot under cold water, and take it out immediately when it changes color;

Put enoki mushrooms in hot water, cook for 2 minutes, remove and set aside

Soup base: Heat oil in a pan, add green onion, ginger and bell pepper, stir-fry until fragrant, pour in enough water, 2 tablespoons of sour pepper juice and pepper

Soup: After boiling, add the fried beef and boil for 30 seconds, sprinkle in millet pepper and hang pepper, and boil for about 30 seconds

Serve: Put the enoki mushrooms in a bowl, pour the cooked soup into the bowl, stir it for a while, and serve
Tips:
1. The beef slices should be blanched in water before adding to the sour soup, otherwise the blood water will make the soup muddy, and the taste and color will be affected.
2. Pay attention to the heat of the fat beef, blanch the water slightly and boil it, then boil it on high heat for no more than 1 minute, it will become old after cooking for a long time.
