Soy Bean Sprouts Fried Pork Skin
1.
Soak the soybeans in clean water until they sprout. (Just show the buds slightly)
2.
Drain the soaked bean sprouts to dryness and set aside.
3.
Put the pork skin into the pot, add a spoonful of cooking wine and remove it after cooking. Let cool for later use. (Fried pork skin needs to be seasoned, so just boil it in white water)
4.
Cut the dried chili into sections, and slice the green onion and ginger.
5.
Cut the skin into thin strips about one and a half inches wide and 5 mm wide.
6.
Put oil in the pot and heat it to 60% heat. Nowadays, the green onion and ginger are sautéed.
7.
Put the pork skin into the pan and stir fry.
8.
Add dried chili and stir fry evenly. (If you don't eat spicy food, you can leave it alone. Put a little pepper to remove the fishy smell of the skin)
9.
Add soybean sprouts, add two spoons of light soy sauce and stir fry evenly.
10.
Add the right amount of salt and stir fry until the bean sprouts are cooked through.
11.
Season with a little chicken essence and serve.
